I called these cookies surprise cookies since my kids wouldn’t have gone for the original name. They were asking for Choc.chip cookies and I didn’t have all the ingredients on hand so we all made these together. They are very good, I have made some notes since I made a few changes since I don’t like baking with sugar. I did put eggs in this recipe, however you can always sub. eggs for ground flax seeds. I have an old coffee grinder that is only used for flax seeds.

Cook 1/3 cup of quinoa in 2/3 cup of water and set aside to cool
Mix Dry ingredients:
1 1/4cup quick cook oats
1 c coconut
1/3 cup of each sunflower seeds, sesame seeds and flax seeds
1 tsp cinammon
1 tsp baking soda
1 1/2 tsp baking powder 2 cups whole wheat flour
1 1/3 packed brown sugar *** I used 1/4 cup of maple syrup and they weren’t sweet, but my kids enjoyed them just as much, next time I may use 1/2 cup of maple syrup or honey – you could also use Agave Nectar
1 cup butter*** I used margarine, I am sub. next time for safflower oil
1 1/2 tsp vanilla extract
Mix wet and dry ingredients – you will want to mix butter and brown sugar first if using – then once the mixture is wet, roll into balls and place on cookie sheet – squish down with your hands but not too thin.
Bake 350 until the top and bottoms are brown, allow to cool and enjoy!!
