This recipe is inspired by Doug McNish and his new book Raw, Quick & Delicious!
The key to enjoying a salad is all in the dressing. This is one way I have never got bored of eating salads on a high raw foods diet for the past 2 years. I’ve experimented with various dressings, dips and ingredients in my blender to make tasty dressings.
Another tip for making good salads is the various textures. I like having a variety of textures in my mouth when I eat a salad.

Prepare your kale first by sprinkling about 1 tbsp of extra virgin olive oil a sprinkle of apple cider vinegar and give the kale a massage with your bare hands. Think loving thoughts as you do this!
Chop your ingredients for the top of your salad: I like cucumbers, yellow and red peppers, hemp seeds, sunflower seeds, cabbage or broccoli too!
Make the dressing: (place all in your blender)

1 ripe avocado – peeled and pitted
1/2 peeled english cucumber – unless its organic
1 small piece of fresh ginger – peeled
2 tbsp of water
1/2 – 1 tsp apple cider vinegar
1 tsp maple syrup or coconut nectar
1/2 – 1 tsp cayenne pepper (depends how spicy you want it!)
Fresh lime juice from 1 lime
Blend until smooth and store leftovers in a mason jar in the refrigerator. Use as a dip for your next snack!
